Honey process coffee is a coffee processing method where some of the sticky fruit layer, called mucilage, is left on the bean during drying. This process creates coffees with enhanced sweetness, balanced acidity, and smooth body.
Despite the name, honey process coffee does not contain honey. The term comes from the sticky texture of the coffee fruit during processing.
