Understanding How Coffee Is Brewed and Balanced

Extraction is the process of dissolving flavors, oils, acids, sugars, and aromatic compounds from coffee grounds into water during brewing.

Balanced extraction creates coffee that tastes sweet, smooth, rich, and flavorful. Poor extraction can make coffee taste sour, weak, bitter, or harsh.

Over-extracted coffee usually tastes:

  • Water too hot
