Approachable and comforting — chocolate and warm cinnamon meeting a crisp note of green apple.

Grown across the highlands of Chiapas and Oaxaca, Mexico, this coffee draws from an unusually wide genetic mix — Typica, Criollo, Bourbon, Mundo Novo, and Caturra — reflecting generations of smallholder farming rather than a single variety strategy. The trees grow between 900 and 1,000 meters in clay mineral soil.

The cherries are fully washed and sun-dried, a traditional process throughout this region that produces a clean, bright cup without masking the coffee's natural sweetness.
