Grown by small agricultural cooperatives in the Chimbu Province of Papua New Guinea, this coffee comes from Bourbon and Typica trees planted at 1,350 meters in volcanic loam soil. Chimbu's remote highland terrain limits large-scale farming here, which is part of why cooperative-grown coffee remains the region's primary path to market.

The cherries are fully washed, then dried in the sun — a straightforward process that lets the altitude and soil do most of the work, producing a clean cup with real depth.
