Standard starting point: 18–20g of coffee for a double shot.

Ideal temp: 198–203°F (92–95°C)

  • Even, level pressure
  • About 30 lbs of force
  • No twisting
  • Keep the puck flat

  • Smooth, honey‑like flow
  • Rich crema
  • Even color
  • No channeling or spurting

  • Sour: Grind finer, increase temp, lengthen shot
  • Bitter: Grind coarser, lower temp, shorten shot
  • Weak: Increase dose or reduce yield
