🌱 1. Choose the Right Coffee
- Roast: Medium or medium‑dark works best
- Grind: Fine — like powdered sugar
- Freshness: Use beans 5–21 days off roast (espresso needs a little rest)

⚙️ 2. Dial in Your Dose
Standard starting point: 18–20g of coffee for a double shot.
Why it matters: Your dose controls strength, balance, and extraction. Small changes = big impact.

⏱️ 3. Target Brew Time
Aim for 25–30 seconds for a double shot.
Too fast: Sour, thin → grind finer Too slow: Bitter, harsh → grind coarser

⚖️ 4. The Espresso Ratio
Start with a 1:2 ratio
- Example: 18g in → 36g out
- Lighter roasts: 1:2.5
- Darker roasts: 1:1.8

🔥 5. Water Temperature
Ideal temp: 198–203°F (92–95°C)
Too cool: Under‑extracted Too hot: Bitter, burnt

🫧 6. Tamp Like a Pro
- Even, level pressure
- About 30 lbs of force
- No twisting
- Keep the puck flat

🌊 7. Pulling the Shot
Watch for:
- Smooth, honey‑like flow
- Rich crema
- Even color
- No channeling or spurting

🧪 8. Taste & Adjust
- Sour: Grind finer, increase temp, lengthen shot
- Bitter: Grind coarser, lower temp, shorten shot
- Weak: Increase dose or reduce yield
- Harsh: Decrease dose or increase yield
